Salt of the Earth, an Israel-based sea salt solutions provider for the foodservice industry, has replaced monosodium glutamate (MSG) in its ranch dressing with Mediterranean umami.

Mediterranean umami is an all-natural sodium-reduction ingredient made using vegetable extracts and sea salt.

The company has taken this decision to help people with symptoms of MSG Symptom Complex such as headache, skin flushing, and sweating.

Many consumers claim to suffer such side effects from MSG ingestion and avoid the ingredient.

According to the company, it has conducted multiple trials of ranch dressing formulations with and without Mediterranean umami and effectively demonstrated the ability to maintain the true flavour of Ranch dressing without using MSG or yeast extracts while reducing 30% of sodium.

Salt of the Earth business unit director David Hart said: “We worked intensively to crack the code of MSG’s unique flavour contribution to traditional Ranch dressing formulations.
