
Danish restaurant group Sticks’n’Sushi is set to open its first Scottish location in Glasgow in November 2025, expanding the group’s network to 31 restaurants across Denmark, the UK and Germany.
The new site on George Square will accommodate 177 guests.
As reported by DRAM Scotland, this signals the start of the company’s next phase of UK expansion, with additional openings planned for early 2026.
The restaurant’s interior, designed by Copenhagen-based OEO Studio, reflects Sticks’n’Sushi’s signature blend of Japanese and Scandinavian aesthetics.
Group CEO Andreas Karlsson stated: “We are delighted to be bringing Sticks’n’Sushi to Scotland – and what better place for us to begin our northern adventure than Glasgow.
“As we continue to look to grow both in the UK and across Europe, we look forward to welcoming the local community, both as guests and new members of our team.

The menu will offer the group’s signature dishes, including sticks (yakatori, or skewers of meat and vegetables), sushi and sashimi, available à la carte or as part of set menus, as reported by Dine Out.
Its dishes include Beef Tataki, featuring beef fillet with miso aioli, truffle ponzu and artichoke crisps, and Temaki Setto – DIY sushi rolls with lobster, wagyu tartare and avocado.
Grilled options include Gindara No Miso, which is miso-glazed black cod, Aigamo Tsukune, which is grilled duck with egg yolk in soy, and Ramu Niku, which is lamb with garlic butter, spring onion, and soy sesame.
The bar will serve sake, Japanese teas, cocktails, premium spirits and Sticks’n’Sushi’s own-label beer.
Founded in Copenhagen in 1994 by brothers Jens and Kim Rahbek and Thor Andersen, Sticks’n’Sushi currently operates 12 restaurants in Denmark, 15 in the UK and three in Berlin.
