MGM Resorts chief content, hospitality and development officer Ari Kastrati stated: “Bringing Gymkhana to ARIA has been years in the making, and we are honoured to have this prestigious restaurant as part of our culinary portfolio.”
The new restaurant follows the original Mayfair location in London, which has become the template for the Las Vegas location.
The 175-seat space has been designed by UK studio North End, led by Samuel Hosker.
Guests enter through green doors, pass through a bar and lounge before reaching the main dining room. The interiors reference historic Indian Gymkhana clubs and private residences.

JKS Restaurants global CEO Pavan Pardasani stated: “We are grateful to work alongside renowned culinary leadership at MGM Resorts as we open Gymkhana in Las Vegas – one of the world’s premier food cities.”
The food offering, created by JKS co-founder Karam Sethi and executed in Las Vegas by executive chef Srikant Kumar, is organised into appetisers, kebabs and tikkas, curries and biryanis, and vegetable dishes.
The menu brings over several dishes from London, such as Tandoori Masala Lamb Chops, Morel Mushrooms & Truffle Pilaf and Lasooni Wild Tiger Prawns, alongside items specific to the Nevada restaurant.
For the first time under the Gymkhana name, the Las Vegas site serves beef dishes, including Wagyu Keema Naan and Beef Shortrib Pepper Fry.
Desserts include Cardamom & Basmati Rice Kheer with figs, chikoo ice cream, rice tuile, pistachios and almonds, and Mango Rasmalai.
Diners can order à la carte, select a tasting menu – with a vegetarian format also offered – or opt for set menus geared towards group dining.
The drinks programme features house cocktails such as Bagheera, described as a green, spiced mezcal margarita referencing Chaprah, an Indian chutney.
A Punch Trolley Service offers large-format serves for up to eight guests, alongside a list of reserve cocktails.
Non-alcoholic options encompass Salted Lemon Nimbu Pani – an Indian-style lemonade – and Alphonso Mango Lassi.
The restaurant lists 780 wines, with 24 available by the glass.
The selection covers regions including France – with a focus on Burgundy and Bordeaux – Napa Valley and Germany.
German white wines, particularly Rieslings, are highlighted, with some bottles dating back to the early 1970s.
