The team behind US-based restaurant Cordelia is preparing to launch a new open-fire concept, Rosy, in Cleveland, Ohio.
Its new Hingetown location is scheduled to open in late January 2026.

Rosy is being developed by Cordelia partners Andrew Watts and chef Vinnie Cimino and will focus on what the team describes as “Ancestral European” cooking.
The venue will offer a menu influenced by coastal dishes from the Istrian peninsula along the Adriatic, which spans parts of Italy, Slovenia and Croatia.
Cimino said: “The opportunity to cook with open fire allows us to explore these old-world dishes and techniques in a completely fresh way.
“You’ll truly taste where you are—our region, our season, our moment—through the best local ingredients that also connect to something timeless.”

By GlobalDataThe restaurant will operate with a communal dining format featuring four “waves” of dishes, including dessert, built around a single central protein, either animal or plant-based.
These shared plates will sit alongside a changing list of à la carte options.
Watts said: “Rosy is our outlook on life, the lens we choose through which to live and operate.
“This is our expression of a neighbourhood party around open fire, where the food and company is equally exciting.”
Rosy’s offer will be based on ingredients described as “hyper-seasonal”, with sourcing focused on producers located within roughly 200 miles.
The restaurant is planned as an approximately 50-cover site, with communal seating created in partnership with local firm Shred & Co.
Watts said: “This is about giving more to our town and providing more opportunities to our team and folks in Cleveland.
“We are excited to be in this neighbourhood – amongst friends, restaurants, beautiful architecture and the West Side Market, the centre of it all. Rosy will bring people together in new ways and keeps us honest on our promise to Cleveland and better hospitality.”
