Major Food Group (MFG) has opened the Carbone Riviera dining concept on the Las Vegas Strip in the US state of Nevada, in collaboration with MGM Resorts International.
The 240-seat restaurant occupies the former space of the Picasso restaurant at Bellagio, an MGM resort.

MGM Resorts chief content, hospitality and development officer Ari Kastrati stated: “Major Food Group’s unparalleled creativity and commitment to excellence have made them an extraordinary partner over the past decade.
“Together, we’ve created a world-class seafood dining experience that will redefine Las Vegas luxury — where Bellagio guests can savour exceptional cuisine, impeccable hospitality and breathtaking Bellagio Fountain views in a setting beyond compare.”
Created by MFG co-founders Mario Carbone, Jeff Zalaznick and Rich Torrisi, Carbone Riviera presents an Italian coastal dining concept.
Interiors are by designer Martin Brudnizki, complemented by artworks attributed to Miró, Picasso and Renoir.

By GlobalDataBellagio has also introduced a waterfront deck for the venue, featuring 33ft Riva yachts where guests can experience the resort’s fountains.
The menu opens with a rotating selection of crudo and other seafood-led dishes.
Items include Nantucket Bay scallops with brown butter and shaved white truffles, lightly grilled chu toro with aceto balsamic and crispy leeks, Scottish langoustines in a green acqua pazza and baked zeppole served with Golden Osetra caviar.
Carbone classics including Spicy Rigatoni Vodka and Caesar alla ZZ feature throughout, alongside a steak selection sourced from Snake River Farms. Desserts include stracciatella tiramisu and Sicilian lemon cheesecake.
Zalaznick stated: “It is an extraordinary honour to serve as the new custodians of one of America’s most iconic dining rooms.
“Carbone Riviera is the realisation of a long-held dream — an expression of our passion, creativity and relentless pursuit of excellence. Drawing on a decade spent breaking boundaries, our intention is to create the greatest fish restaurant this country has ever seen.”
The concept is open nightly from 5:00pm to 11:00pm.
