Mexican restaurant chain CHI-CHI’s has announced its return with the first new location in the city of St Louis Park in the US state of Minnesota.

The outlet at 1602 West End Boulevard is scheduled to open on 6 October 2025 and will act as the flagship for the revived chain.

Restaurant industry executive Michael McDermott, who is the son of CHI-CHI’s co-founder Marno McDermott, is heading the relaunch.

Michael McDermott stated: “We’re bringing back the food, energy and fun that people love, now with a fresh twist for a whole new generation.

“We’re incredibly grateful to our supporters and investors who have helped make this moment possible, and we can’t wait to welcome both familiar and new faces to experience CHI-CHI’s.”

The redesigned venue features an improved bar offering alongside a revised food menu that combines original dishes with new items.

Menu encompass the chain’s original chimichanga, available with beef, chicken, short rib or red chilli and served with guacamole, sour cream, pico de gallo, rice and beans.

El Burro Con Queso is a burrito featuring ground beef or shredded chicken, cheese, chilli con queso and ranchero sauce. It is presented to customers with beans and a choice of rice.

Seafood Enchiladas combine shrimp and crab in a lobster cream sauce, presented with sour cream, guacamole, beans and rice, while Quesabirria Tacos includes three corn tacos stuffed with slow-cooked beef, Oaxaca cheese, onions and coriander, accompanied by a consommé for dipping.

The Manchego Burger features wood-grilled Angus beef topped with Manchego cheese, pico de gallo, avocado and chipotle mayonnaise, and is served with fries.

Nachos Grande is among the original items, and consists of tortilla chips with toppings of ground beef, refried beans, cheese and jalapeños.

CHI-CHI’s has raised capital through equity crowdfunding. More than 2,000 investors have committed in excess of $2.3m via a StartEngine campaign.

The brand plans further locations following the flagship launch.
