
US fast casual restaurant chain Chicken Salad Chick is set to open its second location in New Mexiconon 23 September 2025.
The new outlet will be situated at 2100 Louisiana Blvd NE in Albuquerque’s Winrock Town Center, and is owned and operated by Jennifer Sanchez and Keith Murray.

Sanchez and Murray launched the chain’s first New Mexico outlet in April 2024 and plan more restaurants in New Mexico and in Durango, Colorado.
Sanchez stated: “Over the past year, so many of our guests have asked us to open closer to their neighbourhoods, and Winrock is a more central spot in Albuquerque doing just that. We’re beyond grateful for this community – their support has made us feel like coming home was the best decision we’ve ever made.”
The Winrock location will feature indoor and outdoor dining, take-out, third-party delivery and catering services.
Chicken Salad Chick offers made-from-scratch chicken salad flavours, side salads, gourmet soups, sandwiches and desserts.

The company was established in Auburn, Alabama by Stacy and Kevin Brown in 2008. It has since expanded to more than 310 restaurants across 22 states.
