Culinary robotics company Next Robot has introduced its latest model, Al Dente, which is capable of delivering pasta dishes in four to five minutes.

Al Dente is a solution that comes with auto-seasoning, cooking control and forthcoming ingredient-loading automation.

Tailored for consistency in food preparation, the solution also prepares risotto from scratch, requiring no hands-on attention.

The production version of Al Dente is set to be launched in the second half of 2025.

Al Dente is powered by ChefSight, Next Robot’s AI platform. This technology enables real-time monitoring of the moisture, cooking progress and texture of each dish, ensuring it is prepared properly.

Next Robot aims to develop tools that aid foodservice teams and chefs in delivering quality meals at scale.

Al Dente joins the company’s existing stir-fry unit, Robby, which produces 900 food servings per hour. This unit is being leveraged in more than 100 locations such as schools, restaurants, catering facilities, grocery stores and assisted living campuses.

Next Robot CEO and co-founder Giggs Huang stated: “At Next Robot, we believe food automation shouldn’t erase flavour – it should preserve it.

“Al Dente doesn’t just cook pasta and risotto, it safeguards centuries-old culinary traditions while preparing kitchens for tomorrow’s challenges.”

Al Dente allows chefs and restaurateurs to upload and safeguard generations-old recipes.

It focuses on addressing present-day kitchen challenges such as shortages of labour, inconsistent quality and the high costs of training.

Developed in real kitchens by chefs, the company’s robotics-as-a-service model offers full kitchen automation on a month-to-month lease.

This includes ongoing support such as software updates, service response, preventive maintenance and customer service.
