Town & Country (T&C) Markets, a family-owned market chain in the Puget Sound region in the US state of Washington, has launched Field House, a new market-to-table restaurant.

Located inside the Town & Country Markets Mill Creek store, the new restaurant offers a menu crafted by chef and restaurateur Ethan Stowell.

Ethan Stowell will also offer training to ensure service and hospitality align with T&C Markets’ ethos.

Stowell said: “I’m thrilled to be involved, and appreciate the opportunity to be a part of the Town & Country team bringing a market-to-table restaurant inside a grocery store to life.

“It’s super cool because T&C has the best ingredients in the city – and our Field House team has them at their fingertips to create seasonal, fresh dishes that will surprise and delight people. Field House’s menu features classic dishes with a twist, using seasonal ingredients and products from regional suppliers.

It includes items such as a sockeye BLT, smoked brisket tots and Dungeness crab cakes.

The restaurant also offers a weekend brunch menu featuring Nutella pancakes, a Macrina cinnamon roll and a smoked salmon and spinach scramble.

To complement the food, Field House has curated a selection of beers and wines, along with seasonal frozen drinks.

T&C plans to open its next Field House locations in Lakemont and Poulsbo.
