US restaurant chain El Pollo Loco has expanded its menu with the introduction of Double Baja Shrimp Tostada and the Chicken & Shrimp Tostada.

Double Baja Shrimp Tostada features double Baja Shrimp, avocado, beans, rice, cheese, lettuce, sour cream, salsa fresca and cilantro [coriander] dressing on a tostada shell.

Chicken & Shrimp Tostada features El Pollo Loco’s signature fire-grilled chicken with the Baja Shrimp, finished with a selection of fresh toppings to create a balance of flavours and textures that cater to fans of both chicken and seafood.

The two new tostadas are available at all El Pollo Loco restaurants across the US for a limited period.

El Pollo Loco chief marketing officer Jill Adams said: “With double the protein, our new Double Baja Shrimp Tostada and Chicken & Shrimp Tostada are indulgent, filling and irresistible.

“They’re a fantastic way to indulge your taste buds, and the Double Baja Shrimp Tostada makes a great meal option during Lent.”

In February 2024, El Pollo Loco named Elizabeth Williams as its new CEO.

Williams will join its board of directors, succeeding Maria Hollandsworth who has been serving as the interim CEO since November 2023.

Hollandsworth will take on the role of president and continue her duties as chief operating officer.
