Patina Restaurant Group and chef Carlos Gaytán have opened three new Mexican dining concepts at the Downtown Disney District in the Disneyland Resort.
The three establishments, named Paseo, Céntrico, and Tiendita, marks Gaytán’s first professional venture on the West Coast.
Gaytán said: “My mother instilled in me a passion for cooking, which inspired me to move to America to hone my craft. Throughout my career, I have been merging the traditional French cooking techniques I’ve learned with the traditions and recipes of childhood favourites inspired by my family.
“Getting the chance to combine my love for my home country, my family, and cooking and display that to the guests of Paseo, Céntrico and Tiendita is truly an honor.
“I’m extremely proud to debut these restaurants, which were heavily influenced by my heritage and family, and hope those visiting the Downtown Disney District will create their own memories here, anchored by good food and good company.”
Featuring, rich woods and custom leathers, Paseo menu offerings include cochinita pibil and pulpo enamorado, the latter featuring roasted octopus with a creamy tuna aioli.

By GlobalDataThe restaurant also presents a twist on mussels, infusing French techniques with Mexican flavours, including saffron, chorizo, and pickled jalapeños.
Céntrico, designed with open spaces and lush greenery, offers Mexican staples such as a Caesar salad with a Mexican twist.
The bar at Céntrico serves cocktails, including the Ritual Margarita and the El Mariachi in Manhattan, a Mexican take on the classic Manhattan.
On the other hand, Tiendita offers a fast-casual experience with options like esquites and tacos al pastor.
Guests can order from self-service kiosks or via counter service.
Walk-in service is available now, and reservations for Paseo and Céntrico will open on 1 June 2024, the company said.
Paseo is currently serving dinner, with plans to expand to weekday lunch and weekend brunch, while Céntrico is open for both lunch and dinner.
