Global foodservice and facilities management company Sodexo has partnered with farmer cooperatives Ferryfast and Waste Knot to use boxes of fruit and vegetable products that would otherwise go to waste.

The launch is part of the company’s Wasteful to Tasteful programme, which helps reduce the volume of fruit and vegetables being thrown away or rejected because they are an irregular shape or have passed their sell-by date.

The company’s 112 catering facilities will receive the vegetable boxes on a weekly basis and fruit boxes on a monthly basis.

Sodexo’s UK and Ireland category sustainable procurement manager Catrin Thorndike said: “We are extremely excited to be able to use these vegetables, which apart from their look and size still retain their nutritional value and delicious taste.

“The produce is perfect for use in a range of dishes, including soups, stews and puddings as it really doesn’t matter what they look like before they are prepared and cooked.
