Saudi Arabia-based Zilos Jeddah has introduced a new Italian-inspired menu, designed by executive sous chef Santanu Brahmachary, PNN has reported.

The new menu features Italian delicacies including Maccheroni Al Forno, Spaghetti Cacio e Pepe and Linguine Lobster.

Guests can explore the Rigatoni e Tartufo – rigatoni pasta with truffles – and the Orecchiette ca Muddica with toasted breadcrumbs for added texture.

Chef Brahmachary has incorporated Middle Eastern elements into the Italian menu, as seen in the Zilos Hummus and Frittata Maccheron.

His creations merge regional tastes with Italian staples, with each dish at the restaurant prepared from scratch.

Brahmachary has experience in authentic Italian cuisine and offers a menu that combines both traditional and innovative dishes, crafted with the freshest ingredients.

With more than 20 years in the culinary industry, he has held a range of positions in luxury hotels and premier dining venues across the globe.

Before his role at Zilos Jeddah, he was the chef de cuisine at the Westin Maldives Miriandhoo Resort, where he delivered innovative menu designs and stringent quality control measures.

He also served at Shangri-La’s Eros Hotel in New Delhi, particularly at its Italian restaurant Sorrento and the multi-cuisine venue Tamra.

Brahmachary has also collaborated with Michelin-starred chefs at the One & Only Royal Mirage in Dubai, and played a crucial role in the pre-opening teams of the Leela Palace New Delhi and at the Hyatt Regency New Delhi.

In November 2023, fine-dining Asian restaurant MiSora opened its first location in Jeddah to offer Japanese fusion food.
