Avolta secures 12-year food service contract at Toronto Pearson International

The company plans to introduce a slate of Canadian dining brands as part of the contract.

Swiss retail and food and beverage (F&B) company Avolta has won a 12-year dining contract at Toronto Pearson International Airport in Canada.

Under the contract, Avolta subsidiary HMSHost will be responsible for transforming the dining experience across more than 5,300m² (57,500ft²) of space across Terminal 1 (T1) and Terminal 3 (T3).

The company plans to introduce a slate of Canadian dining brands as part of the contract. This will include concepts such as Mary Brown’s Chicken, OEB Kitchen + Bar and Libretto Slice Shop.

HMSHost will also deepen its collaboration with Canadian chef Roger Mooking to develop a new F&B concept to complement his existing T1 venue, Twist by Roger Mooking.

Alongside new brands, the programme includes a refresh of existing concessions, with updated menus and a stronger emphasis on digital tools.

Planned features include digital waitlists and self-order kiosks, aimed at expediting service and simplifying the ordering process.

Customers will also be able to use the Club Avolta loyalty scheme at the airport, accessing offers, rewards and cross-promotions across participating outlets.

“Over the years of collaboration, we have created a world-class traveller experience at Toronto Pearson, and now, together, we are raising the bar to usher in the future.

“Combined with our new restaurants and bars, these innovations will change the dining landscape as travellers know it. 2026 will be a year that everyone will want to travel through Toronto Pearson, no matter their ultimate destination.”

Toronto Pearson’s management framed the move as part of a broader shift in airport dining towards greater variety and convenience.

“From full-service dining to convenient grab-and-go options, we’re excited to partner with HMSHost to bring fresh and diverse food experiences to our passengers as they travel through Toronto Pearson.”
