SP Motles launches fine-dining outlet Suma in Mumbai, India

Offerings include shawarmas served alongside seekh kebabs and hummus paired with smoked aubergine.

SP Motles has launched its new fine-dining restaurant, Suma, in the Indian city of Mumbai.

The new venue is positioned around a culinary narrative that traces the historic Grand Trunk Road while incorporating Arabian flavours.

The restaurant’s menu is built on a combination of North Indian and Arabic food traditions, reflecting tastes associated with the route stretching from Lucknow towards Afghanistan.

Offerings include shawarmas served alongside seekh kebabs, hummus paired with smoked aubergine, and dishes centred on za’atar, saffron, nuts and coal-roasted marinades.

Suma’s design scheme combines Mediterranean-inspired warmth with elements drawn from Victorian and Indian aesthetics.

The space features an arch-detailed bar, deep colour tones and subdued lighting intended to create an intimate dining setting.

The bar programme is anchored by a signature cocktail list titled Madhushala, described as a homage to Indian poetic heritage.

The drinks follow an ingredient-focused approach and include serves such as Navras, Shahi Barrel, Nawaabi Raat, Jashn-e-Qahwa, Thoda Zyada and Khatta-Meetha Safar.

SP Motles founder Niketa Sharma stated: “Suma is my love letter to the journeys that shaped our food culture. From the Grand Trunk Road to the Arabian sands, I wanted to create a space where flavours, stories, music and memories come together effortlessly. Every dish, every drink, every corner of Suma is designed to make guests feel something. Suma is not just a place to dine - it is a place to experience.”

Chef Rahul, group executive chef at the new restaurant, commented: “Suma allowed us to explore a culinary journey that connects India and Arabia through flavour, technique and memory. The menu is built on slow-cooked traditions, coal-roasted depth and ingredient-led storytelling."
