Texas-based speciality roaster Merit Coffee Company is entering the Houston market with three planned cafés.
The first location is expected to open in early July, with the two other locations scheduled for late 2026.

Merit Coffee CEO Bill Ellis said: “For years, we’ve dreamed about bringing Merit to Houston.
“Houston has one of the most exciting food and beverage cultures anywhere in the country, and we’ve been intentional about finding the right neighbourhoods, partners, and opportunities to establish roots here.
“Opening our first café in West University is just the beginning.”
For its Houston launch, Merit has partnered with local bakery Cake & Bacon to supply sweet and savoury items for the site and future city locations.
Ellis added: “Whenever we enter a new community, we look for partners who share our commitment to quality and hospitality.
“Cake & Bacon embodies everything we love about Houston’s culinary scene, and we’re excited to showcase their incredible work in our cafés.”
Merit Coffee first disclosed its Houston expansion plans in October last year.
Founded in San Antonio in 2009, the company is a family-owned business currently operating 14 cafés across San Antonio, Austin and Dallas.
It added that its “fresh-roasted” coffees are also available throughout Texas at retail partners, including Central Market, H-E-B, Kroger, Sprouts, and Whole Foods Market.
