The à la carte menu is a strategic move by executive chef Ricki Weston, who took charge of the Dining Room in 2022 after the exit of Niall Keating.

The new à la carte menu is flexible, compared to the Dining Room’s existing 12-course, £175 tasting menu.

The restaurant has maintained one Michelin star since 2021 and is the sole recipient of a Michelin Green Star in Wiltshire for its sustainable practices, as reported by The Caterer.

Weston was quoted by the publication: “It’s exciting to launch this new format to give more diners an opportunity to experience our dishes in the Dining Room.

“We’ve designed the à la carte menu with both first-time and returning diners in mind, to offer more flexibility and a more tailored experience.”

Other fine dining restaurants are also introducing à la carte menus and adjusting their prices in a bid to attract more cash-conscious customers.

The three-AA-rosette Dean Banks at the Pompadour in Edinburgh launched an à la carte offer alongside its ten-course tasting menu in August 2024 in respond to customer requests.
