US restaurant chain Just Salad has teamed up with New York City chef Marc Forgione for the launch of its new spring 2024 menu, which includes the limited-edition Chopped Mezze salad.

The partnership aligns with the fast-casual brand’s commitment to seasonal ingredients and innovative recipes, bringing two new limited-time offerings to its menu.

Respect Hospitality Group owner Forgione has crafted the Chopped Mezze salad with a focus on Mediterranean flavours. The dish features Kalamata olives and a homemade dressing with dried oregano.

Forgione said: “This partnership was born out of a mutual appreciation for crafting quality dishes that elevate the culinary experience.

“The Greek Salad is a timeless classic that celebrates the vibrant flavours of the Mediterranean, and I’m excited to bring Just Salad customers my own unique twist on this beloved dish while showcasing the freshest produce and essence of the season.”

The Chopped Mezze features a blend of supergreens, chickpeas, sliced cucumbers, pickled onions, grape tomatoes, Kalamata olives, feta and hemp hearts.

The Oregano Vinaigrette is made with red wine vinegar, mayonnaise, Dijon mustard, extra virgin olive oil, sunflower oil and dried oregano, and seasoned with salt and pepper.

Just Salad culinary director Jhonny Castro said: “Culinary partnerships are an essential ingredient in Just Salad’s continued mission of offering healthy, sustainable options and enhanced flavour profiles for our customers.

“Chef Forgione was a natural fit to collaborate with, as he shares our passion for using ingredients to inspire innovation and developing recipes with flavour, quality, and freshness in mind.”

Just Salad’s spring menu introduces three new recipes that celebrate seasonal produce.

The brand has partnered with Fable Food, an Australian company specialising in plant-based mushroom products.

The new BBQ Shroom Bowl will feature Fable BBQ Shiitake mushrooms, Sesame Edamame Mix and Miso Kale Slaw, among other spring-focused ingredients.

Just Salad also recently launched a range of Sesame Street characters-themed reusable bowls for adults.

The initiative is an expansion of the existing partnership with Sesame Workshop, the non-profit behind Sesame Street, and builds on the success of Just Salad’s kids’ menu.
