Korean-inspired fast-casual brand SeoulSpice is set to debut in Chicago, Illinois, US, in spring 2025.
This brand will be introduced to the Chicago market by Goldstreet Partners, which specialises in scaling transformative brands through market-driven real estate partnerships and industry expertise.
The new flagship location at 20 N Michigan Ave, Chicago, will feature SeoulSpice’s hallmark customisable bowls, wraps and salads, all gluten-free, catering to a variety of dietary needs.
It will offer a blend of traditional Korean tastes and modern dining convenience to a new audience.
SeoulSpice founder Eric Shin stated: “Chicago was first on my list when considering expansion. The city’s vibrant food culture and world-renowned restaurant scene make it the perfect home for our brand. We look forward to becoming part of the Chicago community alongside some of the industry’s top operators.”
Having established a customer base in Washington DC since its establishment in February 2016, SeoulSpice’s Chicago expansion signals a step in its growth journey. The brand is also present in the states of Maryland and Virginia.

In December 2024, Goldstreet Partners revealed that Ambar, Chicago’s first Balkan cuisine concept from the renowned Street Guys Hospitality, will open in spring 2025 at 700 N Clark Street, fusing traditional Balkan flavours with contemporary twists and featuring an all-you-can-eat “Dining Without Limits” menu.
