CML to enter South Carolina with first Columbia food truck

The truck will be run by two business partners, who also plan to add a second truck in 2027.

US-based fast-casual lobster roll brand Cousins Maine Lobster (CML) is set to make its debut in the South Carolina market by launching its first permanent food truck in the city of Columbia.

The truck will be run by business partners Dave Blosser and Matt Cobb. They plan to launch the second truck next year.

In a statement, CML said that Blosser and Cobb have experience in multi-unit management, team leadership and consumer-facing operations.

The partners are targeting Columbia as it develops as a centre for dining, events and community activity, and see scope to build a repeat customer base across the wider region.

Cobb and Blosser said: “Seeing an authentic Maine lobster roll served in the heart of South Carolina is something really special.

“From the energy of the truck to the smell of the toasted New England rolls, we want guests to feel transported to the Maine coast.

“Cousins Maine Lobster isn't just a brand - it's a standard, and that commitment to quality and sustainability is something we've experienced firsthand.”

The Columbia unit will feature CML’s standard menu.

CML franchise development director Lindsay Herberger said: “We're thrilled to welcome Dave and Matt into the Cousins Maine Lobster family and to establish our first permanent presence in South Carolina.

“Columbia is a fantastic market for our brand, and Dave and Matt's leadership, operational strength, and passion for building community make them ideal partners as we grow across the Southeast.”

CML’s Columbia launch will be marked by a two-day opening. The truck is scheduled to appear on 27 February at a live concert series called Finlay Fridays, followed by an appearance at an annual college baseball game in Segra Park on 28 February.

In June 2025, CML expanded its food truck operations to Wisconsin and Minneapolis.
