GoTo Foods brand Schlotzsky's has rolled out a new “next-generation” store prototype to improve brand visibility and create a more flexible operating model for franchisees.
The move comes as the sandwich chain updated its brand identity and returned to its original "Schlotzsky's Deli” name.
In a statement, GoTo Foods said that the new Schlotzsky's Deli store prototype features a “confident” exterior branding to stand out in a crowded fast-casual segment.
From entry to ordering, pick-up and dine-in, the layout introduces natural pause points designed to guide guests through the space.
The store includes self-order kiosks, dedicated areas for digital order collection, grab-and-go options, pre-made cold deli subs and beverage stations placed to support faster service and throughput.
Back-of-house operations have been reworked with a focus on efficiency.
The kitchen footprint has been tightened with repositioned equipment, and redundant steps have been reduced. These changes are aimed at improving labour productivity, smoothing peak-time operations and simplifying execution while maintaining quality and consistency.
The new design caps restaurant size at about 2,100ft², compared with the previous range of 1,400ft²–3,600ft². This smaller footprint is intended to expand real estate options across more site types and markets.
GoTo Foods added that footprint reductions, use of value-engineered materials and modular construction will lead to cost-to-serve improvements, including an estimated 20% to 25% reduction in operating costs.
Schlotzsky's Deli's chief brand officer Donna Varner said: “This design empowers franchisees with unparalleled flexibility without sacrificing impact and brand presence.
“It's efficient, easily adaptable and strategically engineered to support a range of development paths, whether launching a new restaurant or refreshing an existing location.”
Meanwhile, the chain’s menu will continue to feature “The Original” sandwich, alongside a range of sandwiches, pizzas, calzones, soups and salads.
In December 2025, GoTo Foods appointed Omer Gajial as its CEO.
