US fast-casual restaurant chain Mendocino Farms is set to launch its new summer seasonal menu called “Adventure Tastes Like This” tomorrow (2 June).

Developed by executive chef Jeremy Bringardner, the line-up will feature three dishes: Heirloom BLT, Tuscan Pesto Salad, and Seasonal GOAT with Summer Peach.

Bringardner said: “This menu was inspired by the kinds of flavours and moments people crave this time of year for picnic lunches, coastal getaways, or dining outdoors with friends.”

The Heirloom BLT updates the traditional sandwich with heirloom tomatoes, applewood smoked bacon, habanero honey, mayo and toasted sourdough.

Tuscan Pesto Salad includes chicken, cherry tomatoes, seasoned chickpeas, red onion, basil pesto, parmesan, romaine, kale and a basil-Dijon vinaigrette.

The company presented Seasonal GOAT with Summer Peach as a “peach-forward update” of one of the chain’s signature salads.

The seasonal menu rollout comes as Mendocino Farms continues its US expansion and has opened its 100th location in Santa Barbara, California.

Founded in 2005, the company currently operates restaurants across Arizona, California, Colorado, Illinois, Texas and Washington.

In February, Mendocino Farms introduced its spring menu called “Come Graze a While.”
