Alicart Restaurant Group in the US has announced the rollout of the Toast platform across its restaurant portfolio.
The move brings Toast’s point-of-sale (POS) systems and handhelds to some “high-volume institutions” in major cities, including Carmine’s, Virgil’s Real BBQ, and Mermaid Oyster Bar.

At Carmine’s in New York’s Times Square, the group has installed more than 20 Toast terminals, including Toast Go handheld units.
The company says this high-traffic location accommodates around 3,000 diners a day.
Toast’s AI-driven tool, Toast IQ, has been introduced at Virgil’s BBQ in Las Vegas. Alicart reports that staff are using insights from the system to refine menu pairings, with the intention of lifting average cheque values.
Toast Enterprise chief marketing officer and chief operating officer Kelly Esten said: “We build technology that honours the hard work of operators who refuse to cut corners.
“Alicart brands are the gold standard for great food and a great experience at high volume.
“We are thrilled to provide the human-boosting tech and AI-powered tools they need to stay fast, precise, and focused on the thousands of guests that fill their dining rooms every day.”
As part of the collaboration, Alicart Group president Alexis Blair is also due to take a seat on Toast’s customer advisory board to offer feedback on forthcoming product changes and roadmap priorities.
Blair said: “Managing a fast-paced operation like ours means staying on top of countless details, from staffing and inventory to even the smallest menu changes.
“Toast has been instrumental in streamlining these processes, making it easier to identify growth opportunities and enhance the guest experience.
“We’re leveraging Toast in a million different ways and are excited to work with Toast to keep growing our business while helping them build the tools that can help us all succeed across the industry.”
Toast recently launched its new enterprise-grade system called Toast Drive-Thru.
